For the Chicken:
- 2 large boneless, skinless chicken breasts
- 1 cup BBQ sauce (your favorite brand)

- 1/2 tsp onion powder
- 1/2 tsp salt

For the Sandwich:
- 4 brioche or hamburger buns
- 1 tbsp butter (for toasting buns)
- 1/2 cup pickles (optional)
For the Coleslaw (Optional but Recommended):
- 2 cups shredded cabbage (or coleslaw mix)
- 1/4 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
Step 1: Cook the Chicken
- Place the chicken breasts in a slow cooker or instant pot.
- In a bowl, mix BBQ sauce, chicken broth, Worcestershire sauce, brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Pour the sauce over the chicken.
- Slow Cooker: Cook on low for 6 hours or high for 3 hours until tender.
Instant Pot: Cook on high pressure for 10 minutes with a quick release. - Once done, shred the chicken with two forks and mix it back into the sauce.
Step 2: Prepare the Coleslaw (Optional)
- In a bowl, mix mayonnaise, apple cider vinegar, honey, salt, and black pepper.
- Toss with shredded cabbage until well coated. Refrigerate until ready to serve.
Step 3: Assemble the Sandwich
- Butter and toast the buns in a skillet over medium heat until golden.
- Pile the shredded BBQ chicken onto the bottom bun.
- Add coleslaw on top (if using) and place pickles for extra crunch.
- Cover with the top bun and serve immediately.

- Shortcut Option: Use store-bought rotisserie chicken and mix it with warm BBQ sauce for a quicker version.
